Shutter share
Give someone access to a camera (or get them to use their phones) and ask them to spend the day taking pictures of everything they find beautiful.
Good activity to have a child do too.
You could even have a group of people do it, and make a collage or framed quilt/mosaic with the results, do it for an event like a wedding, etc.
